Join us on a culinary voyage to the North American East Coast, the
Caribbean, and the Aztec, Mayan, and Incan cultures as we follow the
Spanish conquistadors in their search for the New World! What foods did
Colombus and other European explorers find when they arrived in
America? What foods
did they bring back with them to the Old World? And how did the foods
from both worlds end
up melding to create new national cuisines? We will cook our way
through these questions making many savory discoveries of our own.
(Students will also learn about the healing and nutritional properties
of indigenous diets due to their use of unrefined, whole foods. The
introduction of white sugar and white flour to the Americas, by the
Europeans, plays an interesting part in the nutritional history of our
own country!)
