This class will focus on the cuisines of Thailand, China,
Vietnam, India, and North Africa, with the Spice Trade route serving as a
recurring theme. Students will become familiar with all sorts of exotic
ingredients from ginger, galanga, coconut milk and lemongrass to coriander,
cumin, turmeric, and cinnamon!
