Following the Indian Spice Trade Route

This class will focus on the cuisines of Thailand, China, Vietnam, India, and North Africa, with the Spice Trade route serving as a recurring theme. Students will become familiar with all sorts of exotic ingredients from ginger, galanga, coconut milk and lemongrass to coriander, cumin, turmeric, and cinnamon! 

 

Aside from being delicious, traditional diets are usually very healthy due to their use of whole foods and almost no refined grains or sugars.  Not only will students learn about the cuisines of these different cultures, but they will also learn why these cuisines are so good for our bodies! Each class will begin with a brief history of the country and its cuisine, culinary influences, as well as the healing properties of the traditional diet.
